SOME of the plants we consider weeds are thought to be great food in other countries. The dandelion is one of these "weeds", but it is a vegetable that contains more potassium than bananas and every part can be used. The roots can be steamed as a vegetable or dried and used as an infusion for tea. The leaves are great washed and used in salads or soups.
